I've scoured the rules but haven't found concrete rules on grenade/missile damage.

Grenades and rockets are tagged items, each with their own stats on their tag (Fragmentation, Flashbang, Greasebomb, etc...).

What do each do? There is no mention of those in the rule books.

What do each do? There is no mention of those in the rule books. Minimum they do the Blast delivery, after that its whatever combination of effects were put into the grenade. Blast Blast is a weapon specific call that can only be used with a grenade, boffer arrow or smoke bomb. When Blast is called, you are considered to be within the affected area if the phys-rep is within six feet of you and is within your field of vision when it lands, or if the phys-rep physically contacts you. For clarity, “within your field of vision” in this indicates that phys-rep did not land directly behind you, such as passing directly over your shoulder front-to-back before landing.

Most Grenades I have seen are strictly damage (albiet Blast thus generally area of effect), I am sure there are a bunch that do a variety of effects/Crowd Control as well.

Grenades are single use blast delivery items. At least, I wouldn't ask to name an item I create a "grenade" unless it was. Generally the tag will say something like "Blast 5" and will require an expenditure of 3 SP or nothing if you have Demolitions Training.
Requiring a consumable item to need demolitions training reduces the cost to produce the item.
For example, I've made "Nail bombs" that do "Blast Maim Leg."
